• Prepare and cook a wide variety of foods in large quantities for regular and modified diet menus.
• Plan and coordinate the preparation of entire meals involving quantity food production, where a number of items are cooked simultaneously and require varied cooking methods, timing requirements, multiple ingredients, and numerous interrelated steps.
• Develop new and modify standardized recipes for quantity cooking and test and evaluates new food products.
• Issue and store food items in accordance with inventory and sanitation requirements.
• Provide instruction on food production principles and techniques on sanitation and safety practices and procedures on core cooking functions.
• Utilize health safety and sanitation practices procedures rules and regulations to maintain a safe and clean work environment.

Conditions of employment

Minimum Qualifications (Screen Out Element): Ability to do the work of a(n) Cook ~ without more than normal supervision.I have the ability to perform common duties such as plan the cooking of entire meals using a variety of cooking techniques; understand food labels, standard recipes, menus, food production sheets, metric conversion tables and work instructions. I can clean, maintain and use a variety of food service equipment. I have a thorough knowledge of food preparation principles; sanitation standards and cleaning methods. I work independently and overcome practical production problems, evaluate final food products, and initiate corrective action; have the skill to coach lower grade civilian/military cooks,and provide instruction in a clear and concise manner, and certify job skills for food. - Failure to meet this Screen out Element will result in an ineligible rating.

• Physical Effort: Work requires continual standing and walking, and frequent stooping, reaching, pushing, pulling and bending. Frequently lifts and moves objects weighing up to 40 pounds unassisted. Occasionally lifts or moves objects weighing over 40 pounds with assistance of lifting devices or other workers.
• Working Conditions: Work is performed in kitchen areas that are well lighted but often hot and noisy. Employee is exposed to steam, vapors and odors from cooking and to extreme temperature changes when entering and exiting walk-in refrigeration and freezing units. There in danger of slipping on wet floors that have been recently mopped or where food has been spilled. Employee is subject to possible cuts from knives and to burns from steam, hot foods, stoves, and hot grease and water.
