Duties

Help

Using a full range of quantity cooking procedures from common or frequently used to new or difficult recipes, prepares a variety of meats, poultry, seafood, vegetables, sauces, and gravies. On a day-to-day basis, prepares and serves meals and snacks in accordance with the requirements of the United States Department of Agriculture Child and Adult Care Food Program (USDA CACFP) and Department of the Air Force Child and Youth Programs (DAF/A1SOC) guidelines.

Follows standardized menus and recipes. Follows procedures for preparing and serving children/youth with dietary restrictions, allergies, and/or special needs. Prepares and presents food so that it is visually appealing to customers. Examines food for quality and freshness before preparation. Coordinates adjustments to standardized menus and recipes with the supervisor prior to making the adjustment or substitution. Independently analyzes and corrects production problems, coordinates the cooking process, and performs kitchen management.

Plans and coordinates a full range of food preparation activities involving quantity food production, initiates corrective action when an item does not meet quality standards, and evaluates final food products. Performs yield testing for selected food items and completes required food production documents. Maintains rotation of food inventories to prevent spoilage. Orders food in accordance with menu requirements. Issues and stores food items in accordance with inventory and sanitation requirements. Labels food that is opened before it is stores. Uses, maintains, and cleans tools and specialized equipment. Washes dishes, glasses, pots, pans, and flatware. Operates a mechanical dishwasher.

Cleans equipment, storage areas, walls and ceilings, floors, work tables, walk-in refrigerators, and duckboards. Sweeps, mops, and waxes floors. Disposes garbage and trash. Carries supplies between storerooms, kitchen, and serving areas. Completes daily, weekly, and monthly health and sanitation inspections; corrects discrepancies or notifies the supervisor within an acceptable time period depending on the severity.

May be appointed NAF Purchase Cardholder for purposes of ingredient purchasing. Performs other duties as assigned.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Your resume must clearly describe your relevant experience; if qualifying based on education, your transcripts will be required as part of your application.

Qualifying Experience:
Must have experience in and a thorough knowledge of food preparation and characteristics of foods. Must be able to plan, coordinate, and time sequence steps needed to prepare entire meals on time without overcooking or waste.

Must be able to adjust recipes for servings required, substitutions and seasoning; recognize characteristics of foods in deciding that raw materials are fresh; and judge prepared food by color, consistency, temperature, odor and taste.

Experience and knowledge must have been gained in a restaurant, club, cafeteria, or similar establishment. Must be able to work shift work, including split shifts.

Education

Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution in order to qualify.

FOREIGN EDUCATION: Education completed in foreign colleges or universities may be used to meet the requirements. You must show proof the education credentials have been deemed to be at least equivalent to that gained in conventional U.S. education program. It is your responsibility to provide such evidence when applying.
