Duties

Help

General (Duties include but are not limited to):

  • The incumbent prepares contracts for all private functions, estimating cost, accepting orders for flowers, wedding invitations, decorating packages, napkins and cake tops. Prepares party worksheets and contracts/proposals.
  • Responsible for all catering functions requiring food and beverage service. Analyzes requirements of the occasion and determines suitable types of service to be provided; discusses menus and beverage items and prices to be charged. Coordinates with managers, food service staff and patrons and draws up the contracts ensuring signed commitments are achieved. Independently commits the various clubs for the requested functions.
  • Coordinates with chef and other food service personnel to arrange details such as printing of menus, procurement of decorations, and research for appropriate entertainment.
  • Inspects final arrangements for catered affairs to ensure all contractual arrangements are met. Monitors functions in progress to ensure service provided is efficient, courteous and correct relative to etiquette, military protocol, contractual terms and private sectors.
  • Is the technical advisor on correct protocol procedures for all catered functions, which includes visiting dignitaries from other commands, the public and private sectors.
  • Responsible for training food service personnel in the proper serving methods, table setting service and customer relations.
  • Maintains up to date inventory of all private function contracts, warehouses, schedules, monthly reports and menus.
  • Performs other duties as assigned.

  • Must meet Federal Employment suitability requirements and successful completion of background investigation. Background investigations are conducted using fingerprint identification and completion of background inquiry forms.

  • A valid State driver's license is required to operate motor vehicles.

  • Incumbent must reside within 50 miles of the hiring installation (NAS Jacksonville).
  • Work may require sitting, walking, long periods of standing, bending and lifting of moderate heavy items up to 50 pounds.
  • Hours of work vary to include possible late evenings, weekends and holidays.
  • Incumbent must possess or be able to obtain Cardiopulmonary Resuscitation and First Aid Certification; Automated External Defibrillator Certification within 60 days of hire.

Qualifications

Specialized experience directly related to the duties described above. Qualifying experience must have been equivalent to the next lower level in the normal line of progression.

Specialized experience must demonstrate the following:

  • A minimum one year of specialized work experience which clearly demonstrates the incumbent's knowledge of catering operations, food and beverage sales techniques in operating a catering food service business.
  • A degree in Business Management is preferred; however experience may be substituted.
  • Much possess the fundamental principles and techniques involved in the operational management of quality catering program and efficient utilization of facilities and equipment.
  • Must have the ability to evaluate the adequacy of the catering operation to make recommendations for improvement or correction.
  • Must have supervisory skills, with a minimum of 6 months experience supervising wait staff or equivalent positions.
  • Must have demonstrated experience with catering functions, to include menu planning, costing, set up, bar staff and clean up staff.
  • Must demonstrate understanding of military protocol and Navy procurement and accounting procedures.
  • Must possess the ability to communicate both verbally and in writing with good command of the English Language to ensure effective communication.
  • Must be people oriented, tactful and diplomatic in dealing with peers, superiors and representatives of other activities.
  • Must have the ability to plan, organize and coordinate functions/activities so as to provide the best quality service to patrons, with personal dedication to complete customer satisfaction.
