Duties

Help

  • Plans and manages the day-to-day operation of a food service program in a large Club Complex where formal dining, restaurant operations, and catering are a regular, substantial basis of the total food operation.
  • Develops daily, catering and specialty menus for all Club Complex operations including "Grab & Go" and off-Site food preparation.
  • Prepares and/or oversees the preparation of meals which involve both moderately complex to complex and new cooking methods and provides instruction and oversight of staff production of food.
  • Balances nutritional values of menus and ensures the quality and timeliness of the total food service program.
  • Develops operating budget, identifying labor, equipment and supply cost elements.
  • Controls pricing and portioning; food ordering, storage and issue; and food production methods and techniques.
  • Directs subordinates in all phases of food preparation/storage.
  • Maintain food cost no higher than 44% each quarter.
  • Provide quarterly menu changes, costings and tastings.
  • Works with responsibility for planning, supervising, directing, and coordinating entire Club Complex kitchen operations.
  • Supervise 12 or more cooks as well as food service workers required for shift operation in the preparation of food, bakery products, maintenance and care of equipment, and the cleaning of the kitchen.
  • Determines workload and amount of raw material needed and establishes performance standards to provide required service most effectively.
  • Develops and establishes working methods and procedures and assures adherence thereto.
  • Checks work of cooks by inspecting food during and after preparation for quality, quantity and waste.
  • Performs work in operating the storeroom with the responsibility of receiving, storing and issuing rations.
  • Trains, develops and motivates supervisors and culinary and foodservice staff to meet and exceed established food preparation standards on a consistent basis.
  • Teaches preparation according to well defined recipes and follows up and discusses ways of constantly improving the cuisine at the property.
  • Display exceptional leadership by providing a positive work environment, counseling employees as appropriate and demonstrating a dedicated and professional approach to management.
  • May be required to work an uncommon tour of duty to include days, nights, weekends, and holidays.
  • Performs other duties as assigned.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Your resume must clearly describe your relevant experience; if qualifying based on education, your transcripts will be required as part of your application.

Qualifying Experience:
  • 3 years Managerial/Chef experience of a high-volume restaurant or catering operations
    • OR
  • Successful completion of an accredited, degree seeking culinary arts program
  • Possesses knowledge and ability to perform routine management functions such as
    • planning
    • scheduling
    • industry best practices
    • coordinating operations
  • Must demonstrate the ability to cost recipe ingredients and menu items with and without costing programs as needed and/or required
  • Experience menu planning for daily operations, bespoke events, and dietary restrictions
  • Demonstrates knowledge of preparation methods of many food stuffs including meats, poultry, seafood, vegetables, soups, sauces, salads, and grilled items
  • Experience ordering, proper storage, counting, and reconciling inventory
Condition(s) of Employment:
  • Must be able to obtain a Food Handler's Certificate and/or complete food handler's training
  • Must obtain (within first six months of employment) and maintain a Food Protection manager Certification acquired through an American National Standards Institute (ANSI) accredited agency (i.e., ServSafe Food Protection Manager Certification Program
  • Must be able to satisfactorily complete a National Agency Check with Inquiries (NACI) Tier 1 backgroun investigation
  • Must be able to speak, read, and write English
  • Must be able to speak comfortably in front of large groups and encourage audience participation
  • May be required to work days, nights, weekends and holidays as necessary to support scheduled events

Education

Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does allow for education substitution in order to qualify.

FOREIGN EDUCATION: Education completed in foreign colleges or universities may be used to meet the requirements. You must show proof the education credentials have been deemed to be at least equivalent to that gained in conventional U.S. education program.
