Duties

Help
  • Manages a large franchise restaurant kitchen. Oversees all food production operations, responsible for purchasing, receiving, preparation, presentation of all food products in timely manner, according to established recipes and procedures.
  • Ensures consistency in food and service to increase sales. Maintains budgeted food and kitchen labor costs and proper inventories.
  • Formulates instructions, gives direction necessary to operate a fluid, and efficient food production operation. Ensures proper handling, maintenance, storage of items. As a second level supervisor reviews actions of subordinate supervisors.
  • Conducts management review of patron food production programs to identify problems and initiate appropriate corrective measures. Evaluates the success of programs in terms of profitability, customer satisfaction and mission accomplishment.
  • Monitors the procurement of all supplies and equipment for the activity.

  • Ability to obtain (within first six months) and maintain a Food Protection Manager Certification through an American National Standards Institute (ANSI) accredited agency is required, (i.e., Serv Safe Food Protection Manager Certification Program).
  • Will be required to sign a Non-Disclosure Statement to safeguard all Franchisor proprietary information. Will be required to complete Franchise training as required in Operating Manuals.

Qualifications

MINIMUM QUALIFICATIONS:

  1. Work experience managing or directing the activities of full-service Franchise style restaurant (i.e.. Steakhouse, etc.).
  2. Two (2) year experience as a General Manager or Kitchen Manager full-service Franchise restaurant concept.
HIGHLY PREFERRED CRITERIA:
  1. Must have minimum of 3 years' experience managing multiple Army Non-appropriated Fund FMWR Business Operations Programs.
  2. Must have 5 years Chef or Food & Beverage Manager Experience.
  3. Must have completed a Non appropriated Fund Financial Management Course or show can successfully complete within 6 months of position acceptance.
  4. Must have experience building and developing recipes in an inventory management system and costing into a point-of-sale system.
  5. Must have a minimum of 5 years Alcohol Sales and Inventory Management Experience.

PCS Costs
  • Payment Permanent Change of Station (PCS) costs IS AUTHORIZED, based on a determination that a PCS move IS in the Government's interest.

Pay-Band (NF or CY) Allowances and Differentials
  • This is a pay-banded position.
  • Sunday premium pay may be authorized by the Garrison Commander. If authorized, only regular (full-time, part-time, limited tenure and seasonal) employees may be paid Sunday premium pay. When authorized, Sunday premium will be paid at the rate of 25% of the basic rate for all hours of non-overtime, when any part of the scheduled tour of duty is performed on Sunday (to a maximum of 8 hours per Sunday). Sunday premium will be paid at the rate of 25% of the basic rate for all hours of non-overtime, when any part of the scheduled tour of duty is performed on Sunday (to a maximum of 8 hours per Sunday).
  • Night differential may be authorized by the Garrison Commander. When authorized, night differential will be paid at the rate of 10% basic rate for hours of non-overtime work performed between 1800-0600.
