Duties

Help

The purpose of this position is to Serves as Food and Business Operations Specialist with in the 18 FSS Business Operations Flight. Reports directly to the Chief of Business Operations.

Assists in developing food and beverage concepts, programs, menu items, and menus in support of the club standardization initiatives including Signature Brand, Name Brand, Core Menu, and Air Force Catering requirements and for bowling center and golf course snack bars, and other food service operations. Responsible fro the planning, development, and implementation of club food and beverage operations that includes new product and equipment research and hands-on testing. Develops standards documents food, beverage, and equipment specifications, standardized recipes, nutritional information and ingredient lists, food and beverage cost, selling price, sales mix, and financial statement analysis. Develops standards and documents food, beverage preparation procedures, and requirements (kitchen operations). Develops order entry guides and researches food, beverage, and equipment requirements with established Prime Vendors and other sources and companies. Conducts implementation, initial opening training, grand opening, and follow-on assistance for Signature, Name Brand and other Club operations and initiative. Trains managers, supervisors, cooks, and food service workers on all aspects of food handling, food preparation, food production, sanitation and housekeeping, food cost management, ordering, receiving, storing, and issuing. Researches, develops, and implements a variety of menus-full service, casual theme, quick service, fast food, catering and special functions. Uses a variety of industry specific management information systems and office software. Develops kitchen, bar, and dining room layouts and equipment requirements. Assists in developing site preparation plans and requirements for facility conversions, retrofits, renovations, and new construction small and large Signature, Name Brand, and club operations. Conducts market and industry research on new food, beverage, and equipment items, consumer, and restaurant trends. Conducts hands-on cooking and preparation tests in actual clubs, restaurants, and snack bar operations. Implements higher headquarters directives, formulates, policy, procedures, and processes to ensure high standards of food,. beverage, entertainment, and membership programs. Performs other duties as assigned.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Your resume must clearly describe your relevant experience; if qualifying based on education, your transcripts will be required as part of your application.

Qualifying Experience:
Must have a minimum of 5 years experience as a club or full service restaurant manager, with strong knowledge and hands-on food and beverage skills or as a chef, kitchen manager or cook foreman. American Culinary Federation (ACF) certified executive chef or cook and/or formal culinary training is highly desired. Must have strong food and beverage costs and analysis, internal and inventory controls, pricing strategy knowledge, and good training, oral, and written communication skills. Must be able to use a variety of management information based tools. Subject to prolong standing and working in extreme temperatures such as hot kitchens and cold to freezing refrigerators and freezers.

Education

Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution in order to qualify.
