Duties

Help

Manages the day-to-day operation of a large hotel Pastry Shop to adequately and economically supply bread, pastries, and dessert items for a formal dining room, family cafe, casual restaurant, and all catered functions. Prepares and/or oversees the preparation of a large variety of muffins, rolls, cakes, pies, tarts, French pastries, cream puddings, gelatins, custards, fondants, ice cream desserts, and stewed and baked fruits. Balances nutritional values of products and ensures the quality of the total pastry program. Develops operating budget, identifying labor, equipment, and supply cost elements. Controls pricing, ordering, storage issues, and pastry production methods and techniques. Directs subordinates in all phases of pastry product preparation. Responsible for supervision of assigned staff.

RESPONSIBILITY:

Supervisors or leaders assign tasks, and incumbents accomplish assigned work. Work is reviewed in progress and upon completion for production, quality, appearance, and overall guest satisfaction.

PHYSICAL EFFORT:

Required standing and walking on hard and carpeted surfaces with some bending, lifting, carrying, pushing, and pulling of items or carts weighing up to 20 pounds.

  • Must be able to lift and carry items weighing up to 20 pounds.
  • Must obtain and maintain a Food Protection Manager Certification from an ANSI-accredited agency (e.g., ServSafe) within six months of employment.

Additional information

This is a limited tenure position not to exceed 15 months. It is an unaccompanied program because we cannot provide logistical support to family members. Dorm-style housing is provided in lieu of a living quarters allowance. Transportation to and from Germany is provided in accordance with the terms of the Joint Travel Regulation and the executed transportation agreement. Military spouses and family members currently residing within the Garmisch Military Community who apply under this announcement will be considered for a regular appointment.

  • All Federal NAF employees are required by PL 104-134 to have salary payments made by electronic funds transfer/direct deposit.
