NON-APPROPRIATE FUNDS POSITION DESCRIPTION

JOB TITLE:    Cook Leader

SERIES:  7404    PAY LEVEL:  NL-05


INTRODUCTION: 
This position is located in Children, Youth and Teens Programs, Child Development Center, MCB, Camp S.D. Butler, Okinawa. As a working leader, the purpose of this position is to lead and direct NA, IHA, and contract cooks and food service workers ensuring the smooth operation of the kitchen and CDC food program. The position also performs as a journeyman level cook to prepare and cook nutritionally balanced meals according to  the established menu plans and maintain overall sanitary conditions at all times.

DUTIES AND RESPONSIBILITIES:

Cook Leader Duties:
As a working leader, leads and directs NA, IHA, and contract kitchen staff in preparing and cooking meals in large quantities in a timely manner. Serves meals for up to 100 to 200 children daily in accordance with USDA Child and Adult Care Food Program requirements.

Relays instructions from CYTP management and Food Operations Specialist. Gets work started.  Works along with kitchen staff and sets work pace. Establishes work schedules and assists management in controlling excessive labor expenses.  Answers questions on procedures, policy, and instructions.  Demonstrates work methods and provides work-related guidance to new employees.  Conducts on-the-job training and instructions.  Checks on work and meets productivity goals.  Ensures employees follow security, safety and housekeeping rules.

Ensures kitchen supplies, worksite materials and equipment are available for daily operation.  Responsible for completing daily, monthly, and annual inventory.

Makes necessary menu changes as directed by Food Operations Specialist. Notifies and receives approval for menu changes from management prior to implementing changes. Ensures that menu and menu changes are posted in a timely manner. Annotates menu changes on the production plan and all posted menus. As required, assists Food Operations Specialist  in developing recipes that would enable anyone to follow an industrial type menu.

Resolves simple informal complaints of employees and refers to management. Reports workplace injuries immediately to the immediate or higher level supervisor.

BASIC REQUIREMENTS:

  1. Must be at least 18 years old and have graduated from high school or been awarded a certificate equivalent to graduating from high school.
  2. A minimum of one year of experience as a cook to include demonstrated ability to lead and supervise subordinate staff.
  3. Must have experience in preparing a large number of servings (100 to 200) in a timely manner at dining facilities or equivalent.
  4. Knowledge of automated/electronic food ordering is highly desirable.
  5. Must be able to accommodate non-standard hours of duty to include nights and weekends.
  6. Must be able to lift and carry objects weighing up to 50 pounds, walking, standing, bending, and crouching for the major part of the shift.
  7. Must be able to obtain and maintain a health card.
  8. Must be able to obtain and maintain a National Agency Check with Inquiries and State Criminal History Repository Check (Tier 1) with Childcare background checks which are required for positions that involve working with children under the age of 18.
  9. Must be able to complete training in First Aid and CPR within six months of employment.
  10. Must be able to obtain a Food Handler's Certificate.
  11. Must be able to obtain and maintain a valid SOFA drivers' license.

QUALIFICATION REQUIREMENTS:

  1. Experience and ability to prepare and cook food items in a timely manner according to the menu plan and verbal instruction.
  2. Possesses cooking techniques and ability to adapt the techniques to a variety of kitchen equipment to include an industrial type electric stove/oven.
  3. Experience and ability to supervise, train, and assign work to other kitchen workers.
  4. Must have a strong command of English to communicate effectively both orally and in writing.

This position is designated as a Position of Trust, and the incumbent must be eligible for a background check.  Appointment and continued employment is subject to a favorable National Agency Check (NAC) Background Security Investigation and maintain updated checks to include the Child and Youth National Agency Check with Inquiries (CNACI).
