Positions are located on a Forest Service Job Corps Civilian Conservation Center.

The incumbent cooks and prepares a variety of hot and cold menu items for Center students and staff. The Cook is responsible for handling and storing food in a clean and sanitary environment and for the control of stock levels of food and supplies.

Duties

Help
  • Order, issue, and store food items in accordance with inventory and sanitation requirements.
  • Operate, breakdown, and clean the standard food service equipment such as a food processors, slicing machines, rotary or convection ovens, and a deep fat fryer.
  • Operate and clean specialized equipment such as a cook tanks, agitating kettles, pump fill stations, tipper ties, blast chillers, and vacuum packers.
  • Use standardized recipes and cooking techniques that have been adapted to the requirements of a specialized food preparation system.
  • Determine portion cost and adjust ingredients in standard recipes when altering the number of servings required.
  • Decide if items are fresh and whether cooked foods are done by their appearance, consistency, texture, and temperature.
  • Schedule and coordinate their preparation to produce a properly cooked meal on time.

Applicants who meet the basic minimum qualification requirements established for the position will be placed in the Eligible category. You will be further evaluated against criteria for placement in the Quality category. This evaluation is based on the level of your experience, education, and/or training as determined by your responses to the Assessment Questionnaire.
