Prepares soups, stocks, broths, gravies, sauces and pudding (without the use of packaged mixes).
Operates specialized equipment to cook food in large quantities and to rapidly chill and store the prepared items under refrigeration for long periods of time.
Adjusts standardized recipes for the number of servings required in large quantity cooking.
Maintains the proper temperature for all foods during holding, transport, reheating, and serving to assure quality control and food safety.
Weighs and measures food items and recipe ingredients.
Takes nourishment inventories, replace expired bulk items, decide what supplies are needed, and labels and distributes individual nourishments to appropriate patients or nursing station.
Uses portion control scales and measuring devices to apportion individual items according to standardized recipes.
Uses, cleans, maintains and stores a variety of cooking utensils required to measure, weigh, and process food items.
Determines the quantities of ingredients needed to prepare required yields.
Immediately reports all equipment failures or safety hazards to supervisor.
