Roasts, broils, grills and smokes meats, fish, seafood and poultry; prepares soups, gravies, stocks, sauces and condiments without use of packaged mixes; prepares and cooks fresh and frozen produce; follows standard recipes for portion control and cost-card compliance; prepares, crafts and arranges cold foods, sandwiches and platters including slicing deli meats and cheeses and a1Tanging breads, toppings and condiments; prepares mixed greens and compound salads, hors d'oeuvres and party platters; prepares refrigerated sauces, glazes, salad dressings and compound condiments (toppings and sauces) without use of packaged mixes; carves and arranges fresh and cooked proteins and produce for catering, tournaments, programs, events and special functions. Trim and brine meats (pork, beef and poultry) and fish/seafood for Live-fire smoke cooking (BBQ); prepare items by peeling slicing, scoring, trimming, seasoning, brining, saucing and glazing: requires ability to maintain and clean specialized equipment and supplies. Performs simultaneous, multiple short-order culinary processes which require setup, cooking and plating of several items with different cooking times and characteristics. Plans-processes to complete and serve finished meals within ten minutes and at proper temperature. 4. Portions food and ingredients for daily use; covers, labels, dates and rotates food and leftovers adhering to Tri Service Food Code and JBLE Food & Beverage Standards; executes daily washing, cleaning and sanitation of equipment and appliances including floors, walls, coolers, freezers, tables, counters, containers, pots, pans, service items and serving utensils.

In order to qualify, you must meet the experience requirements described below. Qualifying Experience: Must have experience in and knowledge of food preparation principles and characteristics of food, and of planning processes to ensure entire meals are prepared and cooked on time. Must have the ability to maintain and clean specialized equipment and supplies including indoor and outdoor BBQ Pits (smokers), lump charcoal and hardwood logs; ability to tolerate of Live-fire cooking conditions including occasional exposure to smoke indoors and outdoors, and in inclement weather. Experience with smokers/grills is highly desirable, Knowledge of operating and cleaning food service equipment, characteristics of various foods, and the ability to season food and decide when foods are done is required. Must be able to perform yield testing to determine portion cost and to adjust ingredients in standardized recipes. Must have knowledge of procedures to order, issue and store food. Experience and knowledge must have been gained in a grill, snack bar, restaurant, club or similar food activity. Must be able to communicate effectively in English. Must be physically able to frequently lift objects weighing up to 40 pounds, and occasionally over 40 pounds. Must be able to continuously stand, walk, stoop, reach, push, pull and bend for long periods of time. Must be able to satisfactorily complete a pre-employment physical. Must be able to obtain a Food Handler's Certificate and/or complete food handler's training. Must be able to satisfactorily complete a National Agency Check with Inquiries (NACI).
Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution.
FOREIGN EDUCATION: Education completed in foreign colleges or universities may be used to meet the requirements. You must show proof the education credentials have been deemed to be at least equivalent to that gained in conventional U.S. education program.
