Duties

Help

Manages the total food and beverage operation for the Carolina Skies Club and Rickenbacker's. Responsible for planning and supervising the all cooks, food service workers, bartenders, and cashier-checkers; adjusts operations in response to changing conditions/customer preferences. Establishes work schedules, assigns work to subordinates and instructs them on proper cooking techniques in preparing a variety of menu items. Interviews potential employees, makes recommendation for selection to Carolina Skies Club and Conference Center Manager; approves/disapproves leave requests, maintains discipline, prepares employee performance evaluations, and hears and resolves complaints. Makes recommendations for
promotion/reassignments/separation of subordinates. Responsible for ensuring kitchen staff is trained. Utilizes and maintains FoodTrak program for control of all food items including purchases, inventory, food costs, menu cost cards and reports. Responsible for security and accuracy of inventories of supplies and foods. Develops menus, plans/prepares daily specials and arranges special functions. Demonstrates work methods and provides work related guidance. Orders a variety of items to support menus, maintains low cost of goods by careful selection of food purveyors and implements food portion control. Responsible for uniform accountability, supply and inventory procedures. Develops requirements and orders supplies, verifies quantity of delivery, prepares reports and vouchers to ensure inventory controls are met. Conducts scheduled and unscheduled inventories of food and condiments and establishes inventory control. Establishes and adjusts menu cost cards as needed to allow for cost variations. Requests repair or replacement of equipment as needed. Assists in preparing kitchen budget. Will fill in to perform duties of cook when needed. Performs other related duties as assigned.

In order to qualify, you must meet the experience requirements described below. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Qualifying Experience:
Have responsible experience in the overall management of a food service operation which provided a thorough knowledge of food operations, including purchasing and receiving food stuffs and food preparation. Experience have been gained in a restaurant, club, cafeteria or similar establishment to include supervision of subordinate personnel performing cooking and cash handling duties. Have a general knowledge of management principles and practices and knowledge of financial planning principles and procedures. Knowledge of etiquette, military protocol, and an automated food tracking program are desirable. Experience with Aloha Point of Sale (POS) is desirable. Be able to continually stand and walk, frequent stooping, reaching, pulling, pushing, and bending. Frequently lifts and moves objects weighing up to 40 pounds unassisted and occasionally lifts or moves objects weighing over 40 pounds with assistance. Be able to satisfactorily complete a pre-employment physical and obtain a Food Handler's Certificate and/or complete food handler training. Be able to maintain DRAM shop Training. Possess skill in dealing with the public. Be able to read, write and speak English. Be able to workdays, nights, weekends and holidays. Be able to satisfactorily complete a National Agency Check with Inquiries (NACI).

Education

Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution.

FOREIGN EDUCATION: Education completed in foreign colleges or universities may be used to meet the requirements. You must show proof the education credentials have been deemed to be at least equivalent to that gained in conventional U.S. education program. It is your responsibility to provide such evidence when applying.
