    Summary

    This position is aligned under the Nutrition and Food Services of the Fargo VA Healthcare System in Fargo, North Dakota. The Cook is responsible for the full range of quality food production using standardized recipes and adjusting recipes appropriately. A variety of menu items are prepared for regular and modified diet entrees and dessert items.

    Responsibilities

    Duties may include, but are not limited to, the following:

    • Roasts, broils, bakes, fries, boils, steams and stews meats, fish and poultry;
    • Prepares soups, stocks, broths, gravies, sauces, puddings and hot cereals (with and without the use of packaged mixes);
    • Prepares grilled items such as pancakes, french toast, sausage, eggs;
    • Prepares fresh, canned or frozen vegetables;
    • Operates specialized equipment to cook food in large quantities and to rapidly chill and store the prepared items under refrigeration for long periods of time;
    • Mixes and measures all cooked items for correct portioning/service;
    • Maintains schedule of rotation for food inventories to prevent spoilage;
    • Assists supervisor or dietetic technician in ordering food in accordance with daily and weekly menu requirements;
    • Performs yield testing for selected food items to determine the serving weight or volume after preparation;
    • Gathers test data to assist management in making and purchasing and menu pricing decisions;
    • Prepares and portions salads and desserts for distribution and service; and
    • Performs other duties as assigned

    Work Schedule: Sunday through Saturday; rotating weekends and holidays. Varied 8 hour shifts to include: 5:30am-2pm, 9:30-6pm and others as assigned.
