Food Service Workers apply knowledge of special procedures in preparing food and serving patients. They select and place food items on patient trays as they proceed down the tray assembly line.
An array of duties consist of the following:
· Preparing simple uncooked food items; such as gelatins, fruit juice, and beverages from mixes, salads, and salad dressings, sandwich spreads, pureed deserts etc. Utilizes standardized recipes or follows oral instructions. Portions salads, deserts beverages, etc. Prepares standing orders for tray line utilizing computer generated lists.
· Sets-up cold-food station on tray line with correct supplies and food items.
· Works cold food station during tray assembly, placing or serving one or more food items on the tray, following the regular or modified diet menus and diet card. Can identify obvious differences between prescribed diets and food items.
· Cleans work area and equipment during use and upon completion of assignment. Cleans other assigned areas. Cleans and sanitizes equipment, such as tables, food processor, blender etc. Uses appropriate cleaning compounds in correct proportions.
· Sorts, pre-rinses/soaks, scrubs, and racks dishes, glassware and flat ware etc. Loads and operates the mechanical dish machine. Removes clean items from dish machine: sorts and stores sanitized items.
· Operates a variety of small equipment, such as blenders, food processors, etc. maintains sanitation and safety of equipment used. Takes proper care of equipment so as to avoid injury or damage and reports obvious wear, need for repairs or any unsafe working condition to the supervisor.
· Utilizes the Nutrition and Food Service DHCP software to pull computer generated lists needed to accomplish cold food preparation and portioning.
· Participating in the continuous monitoring of temperatures, patient satisfaction, tray accuracy, plate waste, etc. required in the Quality Improvement and Quality Control programs. Serves on Nutrition and Food committees, such as Quality Control, Safety or Training and on Medical Center committees, as assigned.
· Performs other duties as assigned.

PHYSICAL REQUIREMENTS: Incumbent's work assignments require light to moderate physical activity, and heavy work, such as scouring and scrubbing large size cooking utensils, pushing/pulling loaded tray carts to and from ward areas. Work on ladders and using powered cleaning equipment is required. There is continuous standing and walking with frequent bending, stooping, reaching, pushing, and pulling. There is frequent moving and/or lifting of objects weighing up to 40 pounds, and occasionally over 40 pounds.
WORKING CONDITIONS: Working areas (kitchen and dish room) are often uncomfortably hot, humid, and noisy. Incumbent is regularly exposed to possibility of being electrically shocked, cut, bruised, burned, or scalded, and/or slipping on wet slippery floors. He/She is constantly exposed to extremes in temperature (cold from kitchen freezers/refrigerators, sometimes to -20 degrees F; heat and steam from ovens, dishmachines, etc. sometimes in excess of 100 degrees F). There is exposure to irritants present in detergents, cleansers, and sanitizing agents.
