The incumbent serves as a Cook, performing a full range of quantity cooking methods for the Phoenix VA Health Care System. Responsibilities include preparing entire meals and require the coordination of several items with different cooking times and characteristics under minimal supervision. The incumbent cooks a variety of menu items including regular and special diet entrees, starches, vegetables, sauces or gravies, and dessert items while adhering to established safety and health regulations and procedures. This position performs duties that require a wide knowledge of food service operations related to food production. Work assignments and schedules will vary according to the needs of the department.

The incumbent prepares a wide variety of food items for use in patient meal service with various types of preparation and delivery systems. Methods of cooking include but are not limited to: roasting, broiling, baking, steaming, frying, and stewing. The incumbent appropriately cooks and/or prepares food and beverages including but not limited to soups, stocks, broth, gravies, and sauces. Follows standardized recipes and production census, adjusting recipes as needed to avoid over/under production. Regulates the cooking temperatures and timing of food items prepared. The incumbent checks food items frequently during cooking and determines when the item is done, making adjustments in cooking times/temperatures as necessary.
The incumbent coordinates work so all food products in the quantity listed are prepared within established time frames or deadlines. Aides in controlling the food usage by preparing quantities indicated on work sheet and standardizing portion sizes. Follows correct procedure for covering and labeling food.
The incumbent prepares a variety of menu items including regular and modified diets. Utilizes a computer to retrieve recipe, menu, and inventory data. Routinely records food temperatures during preparation and service, correctly labels, dates, stores, and utilize foods and leftovers as instructed by supervisor. Examines all food for quality and freshness before preparation. Utilizes Hazard Analysis Critical Control Points (HACCP) methodology to prevent food borne illness and food contamination, and safeguards food through the workflow. Other duties include, but not limited to:
Grade 6 cooks have basic knowledge of food preparation principles and a practical understanding of the physical changes that occur during the processing and cooking of food. They have working knowledge of the planning process involved in cooking an entire meal including the different preparation methods for various food items, the necessary time for cooking these different items, and how to schedule and coordinate their preparation to produce a properly cooked meal on time.
