Applies knowledge and skill to assist in planning and implementing a comprehensive food service program that follows the policies and procedures of the USDA Child and Adult Care Food Program (CACFP). Utilizes recipes and cycle menus IAW USDA CACFP and Army policies.
Plans and coordinates the preparation of meals based on master menus. Reviews recipes, menus, and worksheets to determine ingredients needed to prepare various menu items for regular or modified diets for children with special needs (i.e., diabetes, allergies, or food sensitivities). Prepares meals, makes decisions regarding recipe adjustments for the number of servings and size of equipment to use. Observes products for quality and freshness prior to preparation.
Prepares and cooks all types of meats, poultry, seafood, fresh and cooked salads and vegetables, grains, pasta, fruits, sauces, gravies, breads, and desserts. Utilizes special and/or complex recipes and various cooking methods such as roasting, broiling, baking, frying, boiling, steaming, or sautéing. Modifies or substitutes ingredients to make foods flavorful or to accommodate special diets.
Continuously monitors cooking times and temperatures to ensure safe preparation and completion of cooking according to food service schedules. Delivers and collects meal/snack carts from facility areas to kitchen. Provides food delivery methods to support appropriate age-group eating style (e.g., family style dining in CDCs).
Meets with food and nutrition specialists to coordinate food orders and variety of menu plans. Follows health and safety and kitchen sanitation and keep cooking utensils cleaned and ready for use as well as kitchen equipments. Plans for the delivery and the loading/unloading of food and supplies. Keeps records on food used, portions prepared, meals served, and inventory.
Observes the work of lower graded cooks to monitor the timely preparation of food items and to ensure they are following instructions related to food service. Provides on-the-job training.Assists youth cooking clubs/health and fitness programs as required. Assembles, disassembles, moves, and lifts equipment and other items to accomplish work. Perform other duties as may be assigned.
