60% - Independently performs a full range of simple cooking tasks by preparing and cooking items requiring minimal processing such as sandwiches, salads, eggs, vegetables, hamburgers, grilled items and basic soups. Tasks include grilling, frying, toasting, baking, broiling, boiling, steaming, cutting, assembling, plating and garnishing of food items. Items may be prepared for individual meals or volume service. Food preparation will include a wide range of prepared and raw products that will be combined to produce the meals. Preparation and cooking tasks include the cleaning and sanitation of kitchen equipment, preparation surfaces, utensils and containers. Rotation of stock, storage practices must be maintained to prevent spoilage. Completes work assignments with only “spot checks” from the supervisor.
15% - Must be able to follow written and verbal instruction of recipes and procedures to insure food is prepared safely and accurately. Insure that portion control and inventory control procedures are followed. Has planning skills in order to identify the proper procedures to use to complete the preparation of menu items. Basic math skills in order to calculate the amount of food to prepare in order to expedite the process of preparation and cooking.
10% - Incumbent possesses a basic knowledge of cooking equipment and small kitchen appliances. In addition, possesses basic kitchen knife skills. Knowledge of the characteristics of various foods such as texture, color, flavor, consistency and cooking times.
10% - Is responsible for the cleanliness of his/her immediate workspace at all times. May include washing, cleaning of equipment, utensils, pots, pans, floors and walls.
5% - Performs other duties as assigned.
