Position is located in the Nutrition and Food Service at the VA San Diego Healthcare System. Incumbent supervises approximately 15-20 employees on the shift. Coordinates and monitors all functions of patient cold food preparation and meal service. Checks work of employees while in progress and when finished to ensure all policies/procedures are correctly followed. Ensures food safety and sanitation by enforcing the Hazard Analysis Critical Control Point Program (HACCP) program. Prepares daily work assignment sheets for Food Service Workers grades WG-01 to WG-04, to determine best utilization of staff to accomplish required tasks. Responsible for leave management so as to maintain proper shift staffing and is able to coordinate meal service when there is an unexpected staff shortage. Responsible for the proper care and operation of equipment, tools and supplies. Participates in NFS committees as required, checks and evaluates work performance of subordinates, prepares formal evaluations, notes daily performance and reports to higher level supervision as necessary. Responsible for on-the-job instruction to new and present Food Service Workers as well as gives formal classroom instruction in subjects such as Safety, Sanitation, Operation and Care of Equipment, work Simplification, etc. Assists with the education and training of Dietetic Interns by conducting on-the-job instruction and/or formal classroom training. Must be able to perform all duties of the food service worker and assist when needed to complete these duties.

 

WORK SCHEDULE: Full-time, 40 hours per week. Must be able to work on a rotational shift basis, to be determined when hired. Overtime/shift/weekend/holiday work will be required.

Your background must demonstrate experience in food preparation, understanding food terminology, measurements, and serving information in standardized recipes and regular and modified menus. Apply knowledge of general sanitation principles to safeguard food against spoilage and waste.

 

PHYSICAL EFFORT: Work requires light to heavy work, such as scouring and scrubbing large-size cooking utensils and pushing heavy carts and trucks in unloading, storing deliveries and supplies. The employee is subject to continuous standing and walking, and frequent stooping, reaching, pushing, stretching, pulling and bending. The employee may be required to work on ladders and use powered cleaning equipment. Frequently lifts or moves objects weighing up to 50 pounds; push food carts weighing up to 800 pounds. Work is subject to some pressure to complete assignments with close time schedules.

WORKING CONDITIONS: The work is performed in kitchen areas where the steam and heat from cooking and dishwashing regularly exposed to hot liquids, sharp cutting blades, hot working surfaces and extreme temperature changes when entering walk-in refrigeration or freezing units.
