This position is located in Nutrition and Food Services, VA Medical Center, Hot Springs, SD. In this position you will serve as a foreman of food service, and production personnel, either directly or through subordinate supervisors. Supports and carries out Medical Center and Nutrition and Food Service policies and procedures. Responsible for monitoring and assuring the accuracy of work accomplished by those whom s/he supervises. Duties of the Cook Supervisor include, but are not limited to:
· Knowledge of the use, operation and mechanics of all tools and equipment in the department and to be able to instruct employees in their operation.
· Knowledge of various kinds, cuts, and grades of meat, poultry, fish, fruits, vegetables, breads, cereals, mil, and dairy products.
· Supervisory skills in reviewing and evaluating subordinate work.
· Knowledge of food preparation and service techniques for regular and modified diets.
· Ability to read, write, interpret recipes, menus, worksheets, and other directives.
· Must know how to use portion control techniques and work with measurements in English and metric number systems.
· Administrative knowledge of food production data, inventory control, forecasting, recipe adjustment, production summaries, ingredient lists, weekly menus, etc.
· Knowledge of how and when to prepare and submit all orders for provisions and supplies.
· Communicates appropriately with veteran patients of all ages.

Performs work light to moderate physical effort: continuous standing and walking; frequent stopping, reaching, pushing, pulling and bending; frequently lifts or moves objects up to 40 pounds; pushing heavy carts, wheeled cabinets and trucks to unload and store supplies.
