The incumbent functions as manager for the assigned Food and Beverage facility/facilities. Manages and administers the Food and Beverage facility/facilities operation consisting of the Dining Room, Bar, catering, and special or formal activities to include banquets, parties, receptions, and protocol events. Provides and maintains an efficient and effective food and beverage and entertainment service for military personnel, employees and their families and guests. Ensures the economic and efficient operation of the assigned facility. Plans for attainment of net income, considering operational cost such as purchase of stocks and supplies, personnel cost, factors such as volume, patronage, inflation, etc. Assumes responsibility for cash management, and daily/monthly reporting requirements. Monitors monthly inventories and assures timeliness in-according-with (IAW) the requirements. Ensures bar inventory is done daily and reported for accountability verification. Monthly inventories are completed for accuracy and timeliness. Prepares the annual operating budget and supporting budgets for submission for final approval. Monitors fiscal performance to ensure that financial indicators are in line with approved budget. Conducts long and short range planning to ensure outdated equipment is budgeted, selected and replaced economically and effectively. Oversees the day-to-day operations, to include: supervising and directing work, ensuring a safe and pleasurable environment for all patrons, ensuring the cleanliness and good repair of the facility, reporting any damages, mechanical or other breakage or malfunction, and reporting/correction of safety hazards. Plans, develops and manages daily menus and bar schedules pertaining to regular dining and bar operations and social events held in the facility/facilities. Continually prepares and documents cost of food and labor to determine sales prices of daily menu items and catering contract functions. Plans facility/facilities services economically to meet the self supporting requirements for club management. Ensures that adequate internal controls are developed, in place and enforced. Monitors the cooking process and drink preparation ensuring that quality, quantity and other factors meet customer satisfaction and are effectively and efficiently provided. Serves as fund custodian of the facility, ensuring the safety and appropriate use of funds, ringing/verifying registers, issuing and checking change funds, preparation and/or oversight of Daily Activity Reports and deposits, and assisting with procurement requests, internal controls, physical asset and/or resale/food and beverage inventories. Meets suspense’s on budget, information request, etc. Maintains established stock levels of merchandise and furniture necessary for the operation of the club. Prepares both non-appropriated and appropriated budgets on an annual basis to be incorporated into the overall Food and Beverage budget. Initiates inventory adjustment or survey requests to reconcile discrepancies. Ensures the implementation of higher-level directives and regulations. Promotes, schedules, and manages other special events and programs necessary resources for the purchase of supplies, equipment and resale merchandise. Carries out necessary liaison with other staff officials that support Club activities, customer participation, marketing, purchase of equipment and accessories, etc. Responsible for acting on internal and patron problems with minimal adverse impact on functional programs. Coordinates with customers for special events and assists and provides recommendations on party preparation, considering special preferences, menu popularity, cost of food, local and regional taste, etc. Performs other related duties as assigned. Directly supervises up to some or all of the following: (8) Bartender NA3; (10) Waiter NA1; (1) Lead Cook NA6/7/8 and/or (1) Chef NF3; (8) Food Service Worker NA2/3/4 and (1) Administrative Assistant, (2) Facilities Assistant NA04. Responsible for planning and assigning work, creating and posting work schedules, maintaining work standards and establishing good team relations. Makes organizational changes, with management approval to improve service, increase productivity and efficiency. Conducts continuous on the job training. Interviews candidates for positions and makes recommendations for appointment, promotion or reassignment. Hears and resolves complaints from subordinates; effects minor disciplinary actions and recommends appropriate actions in more serious cases. Identifies training needs of subordinates and provides or arranges for the training. Evaluates performance, and recommends pay adjustments/awards as warranted.
